Carrot microgreens bring the sweet, herbaceous essence of carrot top greens to your plate—a mild, aromatic flavor reminiscent of fresh carrots that works beautifully in pesto, salads, and as a garnish for soups and roasted vegetables. Unlike growing full carrots, which take months, carrot microgreens deliver that distinctive carrot-family flavor in just a few weeks, making them one of the most novel and rewarding varieties to grow at home. Even better in pesto than basil, say some fans.
Grow in trays using coconut coir or potting mix—carrot microgreens take slightly longer than most to develop but reward patience with their distinctive, unexpected flavor. Keep evenly moist and provide good light for the best color and flavor.
